Will Mordido | Chef & Founder Buko Pop Up Restaurant
Born in the Philippines, raised in Aotearoa, his insatiable hunger for innovative cuisine and the ability to stem inspiration from his heritage has lead to the formation of 'Buko'.
His ambitions have taken him around New Zealand, Australia, Fiji, Cook Islands, Germany, and England, with no sign of slowing down.
To Mordido, having 'will power' is paramount. The following is both his personal and business mantra:
"Every morning in Africa, a gazelle wakes up. It knows it must run faster than the fastest lion or it will be killed. Every morning a lion wakes up. It knows it must outrun the slowest gazelle or it will starve to death. It doesn’t matter whether you are a lion or a gazelle: when the sun comes up, you’d better be running"
