'Buko': Pop Up Restaurant

Why Buko?

'Buko' means young coconut in Tagalog, the national language of the Philippines. As a young child, Mordido was likened to the coconut for having three crowns on his head, similar to that of the Buko's three dots. Just as the Buko, he was headstrong and very stubborn. Today, this stubbornness translates into his persistence to defy the status quo and to constantly innovate and re-imagine Filipino cuisine.

Experience a unique popup by Buko by Will Mordido and Grace Patisserie, inspired by the four elements of nature.
Set within the Miele Experience Centre, this dining experience includes savoury canapés and drinks upon arrival, a four-course dessert degustation, each inspired by one of the four elements (Earth, Water, Fire and Air) carefully created and matched with ethically sourced and certified organic teas by Noble & Savage.
In between courses, chefs Will Mordido and Mariah Grace will be engaging with guests to explain the inspiration for each course, joined by other foodies and dessert lovers for an evening of indulgence and innovation.

After successful pop-up events in Melbourne, Fiji and around Auckland, Buko returns for yet another degustation event, this time in Newmarket’s brand new Kitchen Things Luxury Collection showroom.

In celebration of NZ Chocolate Week, Buko is presenting a four course dessert menu, partnering with Whittaker’s Chocolate and the Fresh As° Freeze Dried Range to bring their creations inspired by Willy Wonka and his Chocolate Factory to life.  To top it off, each course is carefully matched with Noble & Savage’s Organic Tea Range.

This is a great chance to socialise and be surrounded by premier kitchens. Choose either the ASKO,  SMEG or BOSCH kitchen seatings and see them in live action. There's also the Wonka Tables, great way to interact with others in these larger communal tables.

What and Where is Buko?

Buko is a pop-up restaurant, we do not have a fixed premises. It is our goal to take a small team of chefs lead by Mordido to showcase our food in existing establishments around Auckland, New Zealand, and eventually, the world. Our menus will utilise the very best of what the area has to offer, paying respects to traditional and modern techniques and flavour combinations, with a special nod to Mordido's upbringing and ongoing inspirations.
